Elegant Mixed Berry Crepes

With the antioxidant power of cherries and the immunity boost of elderberry, this food and bev combo is proof that something that tastes good can totally also be good FOR you.
And it doesn't hurt that No. 5 also contains shatavari root, an aphrodisiac adaptogen. This pairing was MADE for having a good time.
What you'll need
For the Crepes:
- 1 cup all-purpose flour
- 3 tbsp granulated sugar
- 1/4 tsp salt
- 1 ¼ cups milk
- 2 large eggs
- 3 tbsp unsalted butter (melted) + more for cooking
- 1 tsp vanilla extract
- ¼ tsp baking soda
For the Whipped Cream:
- 1 cup heavy cream
- ½ cup powdered sugar
- 1 tsp vanilla extract
For the Cooked Blueberries:
- 1 cup fresh or frozen blueberries (or strawberries)
- ¼ cup granulated sugar
- 1 tbsp lemon juice (optional)
What you'll do
- In a saucepan, combine blueberries, granulated sugar, water, and lemon juice (if using).
- Cook over medium heat, stirring occasionally, until the blueberries release their juices, and the mixture thickens slightly (about 5-7 minutes). Remove from heat.
- In a blender, combine flour, sugar, salt, milk, eggs, melted butter, and vanilla extract. Blend until batter is smooth. Let rest for 30 minutes.
- Heat a non-stick skillet over medium heat. Lightly grease with butter. Pour 1/4 - 1/3 cup batter into the center, swirling the skillet to spread thinly.
- Cook for 1-2 minutes per side, or until the edges are lightly golden. Repeat with the remaining batter.
- In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Spread a dollop of whipped cream over half of each finished crepe. Drizzle a spoonful of cooked blueberries and swirl with the whipped cream. Fold the crepes.
- Dust with powdered sugar and enjoy!
