4 cinnamon sticks
1 1/2 cups sugar
2 cups water
1/2 cup cold brew coffee (we recommend Grady's)
1/4 cup ginger beer (we recommend Cawston Press)
Fresh lemon juice
Apple slice, for garnish
Add water and cinnamon to a small pot and bring to boil. Simmer for 10 minutes, and strain out cinnamon sticks. Bring water back to a boil, add sugar and stir until sugar is dissolved. (Yields 3.5 cups, can be stored in the refrigerator for 1 month).
Combine 1/2 cup cold brew, 1/4 cup ginger beer, 1/4 cup cinnamon simple syrup, a squeeze of lemon juice, and ice in a cocktail shaker. Shake well to combine about 45 seconds. Pour into a tall glass. Garnish with sliced apple. Makes for a fun daytime cocktail!
