Curious Fall Cocktail :: Pumpkin Cinnamon Shooters

INGREDIENTS

2 tbsp pumpkin puree
¼ cup whole milk or light cream
1 cup sugar
4 sticks cinnamon, broken in half
12 vanilla bean, split, seeds scraped
Marshmallow fluff to decorate
Graham cracker crumbs to decorate

 Makes 3 shooters.

DIRECTIONS

To make cinnamon vanilla simple syrup:

Bring sugar, cinnamon, vanilla bean and seeds, and 1 cup water to a boil in a saucepan. Cook briefly to dissolve sugar. Cool and strain. (Can be stored in the refrigerator for up to 3 months, you will only use 1/2 tsp for this recipe).

To make the shooters:

Dip the top of your shot glasses in marshmallow fluff until the rim is coated. Dip the coated rim in graham cracker crumbs until marshmallow fluff is completely covered. Add the pumpkin puree, whole milk or light cream and 1/2 tsp of cinnamon vanilla simple syrup to your blender. Blend until smooth. If you find that it's still too thick for your taste, add a bit more milk. Pour pumpkin shots into marshmallow graham cracker rimmed shot glasses. Indulge with friends!

Note: This is a fun and indulgent recipe that is delish with or without booze. For your non-sober friends, just add a splash of vodka to give it an extra kick ;)
