2 peaches cut into wedges
5-6 cups water
5 Darjeeling tea bags
1 cup freshly squeezed lemon juice
1/2 cup honey
zest from 1 lemon
1/8 teaspoon cinnamon
Heat medium skillet to medium low heat and add peaches, 8oz water, and cinnamon. Cook, stirring occasionally, for 4-6 minutes or until peaches have begun to soften.
Bring two cups of water to a boil. Remove from the heat and add the tea bags. Cover and steep for 10 minutes. Strain the tea into a pitcher. Discard the tea bags.
Meanwhile, place the grilled peaches and lemon juice in a blender and blend until completely smooth. Strain the mixture to remove the pulp.
Add 3 cups cold water,the peach/lemon mixture, the honey and lemon zest to the pitcher with the tea. Place in the fridge and chill until cold for at least 1 hour. Taste, if too sweet add another cup of cold water or more ice cubes.
Serve over ice and garnish with peaches and lemons.
